Copper Double Boiler/Bain-Marie
An unusual bain-marie (double pan) with pouring spout.
This type of cookware would be used in a large country or town house. The Victorian cooks of this time would be used to elaborate entertaining and this type of bain-marie would be a particularly useful tool. The bottom of the pan would be filled with hot water, the smaller pan would be placed on top. Cream-based sauces and desserts would have been slowly cooked in the top pan without the danger of the liquid burning. After cooking, the boiling liquid could then be safely drained from the bottom pan.
The pan is constructed of copper with a folding seam and two iron handles riveted to the sides of each pan. Made in France c1890, all original in good condition
